Champion comes from the word 'camp'. Literally, it means the protector of a camp, a tribe, a guild... Here is its specificity:
1 – Only one character is The Champion, that is the character winning the Holy Jousting every Solstice or Equinox.
2 - The champion is considered as heir to the throne because of his skills. It is the most powerful person of the guild and has proven it well... In the possibility that the King departs for some time, the throne of the Order is left to the Champion, for the gods have decided as much... In terms of responsibility, the champion has the same burdens as a Prince would. When the King is away for an extended period of time, he/she is to be placed in charge. So it's time to be serious about it. You don't want to create a mess.
3 – The Champion has been chosen by the gods to be heir of the Guild. Thus he can be a Member or an Officer. It does not matter since he/she is respected either way. When he/she is elected, he/she nevertheless rises up one rank.
4 – The Champion is a very important Character of the guild. He/she is the equivalent of a Noble. He/she is heir of the duty of Kingship. Thus, even though he/she might still be of another rank or path, people greet the Champion as though he/she were a Noble. The Champion presents respects to the others as if he/she were a Noble himself, so your salute codes might change.
5 – The role of the Champion is also to represent any guild member who is unable to fight properly against anyone menacing the Guild or the Order. The Champion is the best of us in terms of courage and martial skills. If there is trouble to be settled, he/she is called. Moreover, the Champion might sometimes represent the whole guild when trouble occur between two guilds. Lots of past wars have been settled with a fight between two champions. That limits bloodshed and is perfect for repute. (think of Achilles...)
6 – The Champion keeps his/her Title until he/she is tired of it, in which case the King designates a successor, or until the gods ask for a new tournament, the next Solstice or Equinox...
7 – When the Champion wins the tournament, his/her fee is restored to him/her, and he/she usually receives gifts of all kind, from the Master but also from all the members. He/she is the best so he/he has to be praised as such.
8 - If the champion wins the four jousts of the four seasons he is to be made Duke and will be given his own guild as Ally to Camelot.
